Family run since 1961 on a side street thirty seconds from the Pantheon, small enough that a table booked even a day ahead is the only reliable way in. The cacio e pepe is the dish regulars order without opening the menu, tossed tableside for anyone who asks. It has stayed a genuine neighbourhood trattoria despite the location, prices sit well below what the address alone could justify charging.
